This creates a special cupping profile. The process involves three steps, depending on moisture content. ‘Gabah’ is when wet parchment coffee is dried immediately and hulled. ‘Labu’ is for wet green beans at about 30-40 per cent humidity. The third step is ‘Assalan’, exported at 12-13 per cent humidity. The coffee is grown at altitudes between 1,200m and 1,600m high in the north west of Sumatra.
